"As we embrace primitive cooking with an open fire, we use non-specific woods to fire our kitchen. We also use minimal ingredients on the plate. Instead, we are committing to use what’s available on the day to ensure keeping the creativity of our offering, working with local line-caught fishermen and suppliers; this is how we reflect on living on the island and using the best possible sources to live."
