SUSTAINABILITY MANAGEMENT
SMOKE works exclusively with large cuts of meat, ensuring no waste by using trimmings to make sausages, soups, and sauces. They focus on less commercial cuts to ensure the entire animal is utilized, unlike other venues that source familiar, high-demand cuts. Unused vegetables are composted and used in their garden. All their firewood and coals are locally sourced to minimize transportation footprint.
